This is halloween!

Here’s the update I promised you on our spooky scary Halloween

After returning from running lots of errands yesterday, I got straight to work making Halloween cupcakes for the October Cake Eaters Anonymous event.

What do you think?! I’ll post the recipe on here tomorrow :-) The cute Halloween toppers are the ones I got from Sainsburys on my baking supplies trip a few weeks ago.

I didn’t go too overboard decorating the house for Halloween, I probably spent £5 overall. We got a scary pumpkin…

The Great British Bake Off episode 2

What did you think of The Great British Bake Off last night? I really enjoyed it but it wasn’t my favourite as I’m not really pastry’s number one fan (thats not to say I wouldn’t eat a slice of homemade tarte au citron if it were offered but its just not my favourite thing). I was quite surprised that ‘the handsome one’ stayed in despite his pastry disaster, but at the same time I’m sure cooking under those conditions is incredibly stressful and even the best of us would probably mess up our most tried and tested recipe!

I am very excited about next weeks episode though – I love bread! Especially foccacia bread – in fact I’ve been meaning to make some for a while, so I think I’ll make some using the same recipe the contestants use and see how it turns out.

Fun bake off fact – Mary Berry is 76 years old – I hope I look that good in 50 years time!

Chocolate chip cookie dough cupcakes : the recipe!

Thanks to you all for the positive response I got when I posted the picture of my chocolate chip cookie dough cupcakes on Thursday. They are without doubt the best (cutest and most professional looking) cupcakes I’ve ever made – they even won me a prize!

They were also delicious – here’s how you make them! I originally saw the recipe for these cupcakes over at Annie’s Eats. My version below makes 12-16 cupcakes rather than the original 24, and also adds a couple of pretty vital instructions the original recipe leaves out.

The recipe is a slightly odd mixture of g and cups as I converted it from american, but it really is still very easy – just use the same size mug to measure out all the cup measures (or use a cup measure!) and you’ll be fine.

Here’s what you’ll need! Normally I would get put off my recipes with 3 different sets of ingredients – but don’t, they’re actually very easy to make.

For the cupcakes:

  • 170g  unsalted butter, at room temperature
  • just under 1 cups light brown sugar, packed
  • 2 large eggs
  • 1.3 cups all-purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • half a cup milk
  • 2 tsp. vanilla extract
  • half cup chocolate chips

For the filling:

  • 2 tbsp. unsalted butter, at room temperatur
  • 3 tbsp. light brown sugar, packed
  • .5 cup plus 1 tbsp. all-purpose flour
  • 100g sweetened condensed milk
  • ½ tsp. vanilla extract
  • .5 cup cup mini semisweet chocolate chips

For the frosting:

  • 170g  unsalted butter, at room temperature
  • .3 cup light brown sugar, packed
  • 1.6 cups confectioners’ sugar
  • 0.5 cup all-purpose flour
  • pinch salt
  • 1.5 tbsp. milk
  • 2 tsp. vanilla extract

First, preheat the oven to around 160 degrees and then whiz up your very soft butter with your light brown sugar. A promising start!

I made the chocolate chip cookie dough cupcakes with Emma as she made red velvet whoopie pies for her Cake Eaters Anonymous entry.

Next, add the eggs one at a time, beating well after each one with the mixer. At this stage, also add the vanilla extract and chocolate chips. When you add the chocolate chips, be sure to coat them in a couple of tablespoons of flour first (this ensures that they don’t sink to the bottom of the cupcake. Then, add the rest of the flour, baking powder and bicarb and milk. Beat well. I suspected that the batter was extremely delicious and I tested it to make sure – it was extremely delicious!

Slide the batter into your cupcake cases – filling no more than just over half high. I found that my version intended to make 12 cupcakes made more like 16 so you may have a few spare! Pop them into the oven, remembering to turn them at least once so they brown evenly, and start to test for doneness after around 15 minutes.

Next up, make the delicious cookie dough batter to go INSIDE your cupcakes! I know, what fun.

WARNING – this stuff is addictive and once you know how to make it, there’s no going back. First, combine the soft butter and sugar and then add the chocolate chips and condensed milk and vanilla.

Apply some of the mixture to face and then put into the fridge for a while to harden slightly.

At this point my cupcakes had finished cooking and were cooling on their racks. Once they are completely cool, its time to cut out their centres!

I must apologise about my terrible pictures from here on in – we lost the light :-(

Using a sharp knife, cut a cone shaped slice of cake out of the cupcake ready to receive the cookie dough. Eat the spare cake.

Then using a teaspoon, dollop as much cookie dough as will humanly fit into the cavity. Lovely. Smooth down with the teaspoon.

One last thing to do – make the frosting. This is a pretty standard frosting recipe but the addition of the brown sugar and chocolate chips sprinkled on top gives it a lovely cookie flavour. It also has flour in it which was a first for me, but you couldn’t tell from the taste of the finished frosting at all.

First, beat the butter and brown sugar before adding the icing sugar.

It goes everywhere. Oh well.

Next, add in the flour and a pinch of salt and then the milk and vanilla extract. At this point it will come together into a creamy loveliness.

Fill your piping bag with frosting and have at the cupcakes! I used the wilton 1m tip and was very pleased with how they looked.

Lovely! Once I’d finished piping them, we sprinkled chocolate chips and then a mini chocolate cookie (a mini maryland cookie to be exact which they sell in multipacks at the supermarket) to each one.

I learned a valuable lesson here – don’t add a mini cookie until the *second* you’re going to serve the cupcake as otherwise the cookie will go soggy.

Chocolate Chip Cookie Dough Cupcakes!

I asked you guys what I should bake for the August Cake Eaters Anonymous event and you voted for the chocolate chip cookie dough cupcakes from over at Annie’s Eats!

So last night, I made them! With Emma’s help of course.

And they are the cutest thing ever!

And eating leftover cookie dough for breakfast is the best thing ever!

A cupcake tour of London!

Yes its the London Cupcake Crawl 2011!!!

Yesterday I headed down to London with Kate, Susan and Emma for a long fun day of eating cupcakes. The first stop was the Primrose Bakery on Tavistock Street. The bakery is painted a lovely mellow yellow colour and is very cute and kitsch-y inside with diner-style tables and chairs.

You can see their cupcakes here – they were reasonably priced I thought at £1.60 for a mini and £2-£3 for a large. I had a lime and coconut cupcake, which was £2.20

I would rate this cupcake a solid 7 out of 10. I really loved the unusual lime and coconut combination and how the zesty freshness of the lime cuts through the richness of the cupcake frosting. The cake was moist though not as evenly cooked as it could have been. The cake didn’t taste of either lime or coconut, only the frosting, and I think that this cake could have been improved with a lime glaze through the sponge.

Emma got a vanilla cupcake which I also tried which was very nice – it didn’t taste of vanilla though – just plain. Thats not a criticism of Primrose, as my Hummingbird bakery vanilla cupcake also didn’t taste of vanilla, and I’m not sure mine do either, no matter how much vanilla extract I add to them. I’m wondering whether to switch to vanilla bean paste?

Next stop was Ella’s bakehouse in Covent garden. On the way there we headed into the London Transport Museum where I bought this retro poster for my house.

Like most shops in Covent Garden, Ella’s is absolutely tiny. It has about 7 seats inside and some small tables outside though.

Inside, there’s a fairly small selection of cupcakes. I dithered and dithered, torn between a vanilla, black bottom or chocolate cupcake. They had some fun varities like Banoffee and Maltester too.

In the end I went for a nutella, which had pieces of hazlenut throught the cupcake sponge and nutella frosting. I believe it was £2.50

This cupcake was absolutely delicious. The small nibs of hazlenut throughout the sponge aren’t something I would have thought of myself and they really added something to the cupcake. The cake itself was light, moist, tender and absolutely lovely. Probably the best cake of the day!

I thought my cake was let down slightly by its frosting though – as you can see from the picture, its a very light chocolatey colour. It clearly had a tiny amount of nutella in it and didn’t taste at all chocolatey or like nutella. If this cupcake had had a proper nutella frosting, or nutella drizzled over the frosting it would have been absolutely PERFECT. Sigh.

Overall though I would rate this cupcake 8 out of 10 and wouldn’t hesitate recommending Ella’s bakehouse to anyone. It absolutely deserves all the praise and positive reviews it receives.

Emma had a cookies n cream cupcake and a mini red velvet cupcake which were both lovely, with one problem – a very soggy oreo!

Before we headed for lunch, I saw a branch of Laudree and couldn’t resist popping in for a couple of mini macaroons. I got a coconut macaroon and a salted caramel macaroon for Lee. They were both absolutely delicious, although my coconut one was somewhat wet and not crisp as a macaroon should be.

As with Benito’s Hat (coming up) Laudree was staffed by authentic french…. teenagers. Seriously, they were 16. So the customer service/communication was not exactly stellar and Emma had to wait quite a long time to get what she wanted. Grr!

Next up we decided to head to a branch of Benito’s hat  in Covent Garden for lunch. I’d read about it in a Time Out article about London’s best burrito’s.

I got a chicken burrito with guacamole and a drink which came to about £9. The experience of ordering in Benito’s Hat wasn’t great at all. The staff were all mexican/spanish (yay authenticity!) which led to somewhat of an understanding problem. Out of 4 peoples orders, 2 of them got messed up (one friend ended up with a burrito instead of tacos, and with a veggie burrito instead of a chicken burrito).

My burrito was okay. It was certainly nice to have some savoury food after all the cupcakes! But it wasn’t great. The refried beany mush inside had a weird taste to it. I think I’d like to try my hand at making homemade burrito’s in the future, but I doubt I’d want to go to Benito’s Hat again.

After that, we couldn’t resist popping into Cybercandy. I was a bit candied out so I didn’t buy anything, but my friends bought some Flipz among other things (remember Flipz? they were awesome. I wish I had some now).

I was like OMFG when I saw these Cadburys varities by the till. ROCKY ROAD DAIRY MILK, what what!!!

They also had macadamia and top deck but sadly it was nearly £6 (!!!) so I resisted.

Back to cupcakes!!! With excitement building (at least for me!) we headed to Wardour Street to go to the Hummingbird Bakery!

This has to be the fanciest bakery I’ve ever been into!! They had a massive variety of different cupcakes, although none of the specials appeared to me as they’re all ‘old fashioned sweets’ and I’m not that keen on sweets (only cakes!).

I got a vanilla cupcake instead for £2.50 which was good value. I also got Lee a mini vanilla cupcake. The eat in prices were more (which I guess they have to be as its so popular) so we took our cupcakes to go as there was nowhere to sit.

The take out boxes were included in the price and were absolutely adorable. The white one held my vanilla cupcake perfectly without it getting smushed.

The classic cupcake! I thought my vanilla cupcake was outstanding. Lovely soft, fresh, fluffy sponge (not at all claggy like when I made my hummingbird cupcakes though they ostensibly follow the same recipe – I must have done something wrong). The frosting was very sweet and by the time I ate the last bite of the cupcake I was kind of like ‘argh sugar rush!’ but that isn’t a criticism as all frosting is sweet. Overall I loved this cupcake! I would give it 9 out of 10.

Kate got the brownie – cheesecake – raspberry cream which she said was fantastic – but very rich, she couldn’t quite finish it all!

Next we headed to the new Forever 21 store on Oxford Street. I have a nice dress from Forever 21 that I got from the bullring but their stores are a bit of a jumble sale and the new flagship is of course the biggest one yet. Its three floors of seemingly randomly organised clothes which isn’t particularly easy to shop!

I did like their ice cream van though.

The queues were rather long…

Overall, the look and feel of the store is quite cheap and tacky – the clothes aren’t merchandised in clever, quirky ways, they seem to be just plonked everywhere. Some of the clothes are also absolutely hideous/ridiculous/would blatently fall to pieces within a few days.

I did however get a nice soft casual t shirt from there for £8- shame it says 1985 and not 1984 (the year I was born!).

We were flagging slightly at this point, but we still had time to pop into Selfridges and check out their food hall (we were tempted by the amazing looking Lola’s cupcakes but were a little cupcaked out).

Look at the amazing baking supplies! Hersheys chocolate syrup! Funfetti cake mix! Cornbread!

Then we stopped at the new Pinkberry counter to get some frozen yoghurt (opposite Krispy Creme near the entrance to the foodhall).

I wasn’t at all impressed with Pinkberry though the other guys really liked it! I ordered watermelon flavour but it tasted of strawberry (it WAS strawberry). False advertising! I hate the artificial strawberry taste that ice creams/yoghurts have so I didn’t enjoy this.

Another thing that annoyed me was the prices. They are ridiculous. I paid £3.20 for my plain yoghurt and to have some toppings added would have taken the total up to £5.20 (for a small).

That. Is. Ridiculous. Also, I’ve done some googling and found that their yoghurt in the US, although its considered v expensive (and not as good) as other frozen yoghurt chains – is half the price as here!

I goddamn hate when American chains come to the UK and double their prices.

Phew! That was a long post! Pinkberry disappointment aside, I had an awesome time on the cupcake crawl! I sugar crashed pretty hard on Sunday, but it was worth it!

Bits and bobs for baking geeks (& baking beginners!)

I thought I’d do a post to show what kind of baking equipment you’ll need if you’re just starting to get interested in baking – and also some of the more niche, strange baking stuff thats out there!

Baking basics – what you’ll need

Generally, you don’t need a lot of fancy pans to do any baking AT ALL. You can make most things really easily without specialist equipment. You will need a few different sized and shaped pans to make most basic brownies, cookies, cakes and bars though.

Brownies and bars

A brownie pan can be any rectangular or square pan, usually around an inch deep. For a bigger batch of brownies, you can use a large roasting tin too. The brownie pan that I use most often is a square one that was great value from Dunelm Mill, but Wilko’s and most supermarkets have a good range too.

If brownies are a big part of your life (as indeed they should be) then take a look at this…

The ‘corners’ brownie pan is only £7.50 – and is designed to give you perfectly cooked brownies with lots of yummy crispy corners. I think this is a fab idea!

Cookies, whoopie pies and macaroons

The only type of equipment you need to make these is large flat sheet pan (at least thats what the americans call it. It looks like this.

For making cookies, the bigger a pan you can get the better as this means you’ll be able to cook lots of cookies at once. The little ones that have a cooking area little bigger than a piece of A4 paper (like the one pictured above) really aren’t much good, size wise.

I’ve got a very large one (so big it didn’t fit in my last oven except in the very middle bit!) from Wilko’s that was £6. Its made of enamel which means that the coating doesn’t flake off or discolour – I’d really recommend buying all your baking pans and tins in enamel – its slightly more expensive to start off with, but they will last much much longer than the cheaper ones, saving you money in the long run!

Ideally you’ll need 2-3 of these pans to make it a doddle when you’re baking cookies etc, otherwise you’ll need to bake in small batches rather than all at once.

You can get special pans for making cookies, whoopie pies or muffin tops (below). In my opinion these are a complete waste of money as you can get the exact same result using a normal baking sheet. Maybe your cookies will be a little less uniform, but if you want uniform cookies, you buy them in a shop!  What do you think?

Cakes

I’d recommend you start out with two basic types of cake tin – a round pan and a loaf pan. I have two of each and I find that works perfectly. Unless you’re planning on making lots of cakes in one go, thats all you need!

 

 

 

 

 

 

 

There are also quite a few different specialist cake tins out there that you can get. There are bundt tins, to make budnt cake, predictably enough! You’ll also need a special tin if you want to make madeleines, or a giant cupcake (yum!).

The London Cupcake Crawl 2011

If you’re reading my blog and you’re not English (oooh international readers, how exciting!!) a pub crawl is an English…. tradition whereby revellers go to pub (thats a bar to non-English people!) after pub and enjoy drink after drink, generally carrying on for as long as they can stand.

That doesn’t really sound like my kind of thing though.

But as you know, cupcakes are my kind of thing!….

Yay cupcakes!

Well now my friend Emma has invented a Cupcake Crawl! FYI that term is totally trademarked. Here’s the official logo – !

And here’s our plan of the cupcake bakeries to visit ! While putting together the list of cupcakeries to visit, I used this article by Kelly of An American Cupcake in London who did a guest post on Cupcakes take the Cake! We also took into consideration where the bakeries are and tried to plan to hit up ones that are close to each other – these are all in or around the Covent Garden area (ish) -

  • Hummingbird Bakery – I’ve never had a hummingbird cupcake (although I have both their cookbooks) and we just have to go here. Hopefully I’ll try a few of their different cupcakes! Top of my list are the classic vanilla and tiramisu cupcakes.
  • Ella’s Bakehouse - This bakery is owned by Lorraine Pascal, the model turned chef who I’d never heard of until her recent TV show (which I wasn’t that much of a fan of). The reviews for this place and their cakes are amazing though so I’m very excited to go!
  • Ottolenghi – Not strictly just a cupcake bakery, Ottolenghi do pastries and savoury food too, but I’ve heard so much good stuff about this place that we have to try it!
  • Bea’s of Bloomsbury – Not one I’d heard of before we started planning this trip but again the reviews are great!

Hopefully we will get to go to more cupcakeries but those are the main priorities. After the trip next saturday I’ll be posting pictures and reviews of each bakery for you guys.
