Custard creams are constantly in my life. Lee LOVES them and we always have some in the house. When I’m craving something sweet and they’re all we have in the house, I sometimes resort to eating one with a cup of tea despite the fact that I don’t really like any of the shop bought versions I’ve tried. I always complain about them and Lee reminds me that they are the UK’s favourite biscuit so they must have some merit.

I can’t detect any in the shop bought version, but homemade ones are definitely amazing. Buttery, crumbly and delicious – you’ll be amazed how good they taste! Here’s how to make them.

You’ll need -(makes 24 small biscuits)

  • 110g butter
  • 110g caster sugar
  • 1 tsp vanilla extract
  • 140g plain flour or cornflour
  • 80g custard powder
  • 1 egg

First, pre heat your oven to 190 degrees/ 350 farenheit / gas mark 5.

Cream the sugar and soft butter together, then add the flour/cornflour and the custard powder. Its best to use cornflour if you have it but flour is fine too. Then add the egg and you’ll have a pale orangey dough. Bring it together with your hands and then wrap in clingfilm and leave to rest in the fridge for at least 20 minutes. At this point, you can also freeze some of your dough if you’d like to make some at a later date.

I divided about a fifth of the mixture and added a couple of tablespoons of cocoa powder to make chocolate custard creams.

Once its had a chance to rest, sprinkle some flour on your worksurface and start rolling it out. Cut your dough into a third or quarter so that you can roll it out a small piece at a time – you need to get the dough very thin – almost as thin as you can. Be sure to keep it well floured on each side.

The above is not thin enough. You need to get it REALLY THIN! If you had a pasta maker you could try using that!

Because, as you can see, they puff up quite a bit in the oven….

Meanwhile, make your custard cream buttercream! You’ll need –

  • 100g soft unsalted butter
  • 2 tbsp custard powder
  • 200g icing sugar

Mix them together! If you’re feeling more adventurous with your custard creams you can make different fillings too. I added cocoa powder to make chocolate buttercream, and some dulce de leche to some to make a caramel version. You could also do strawberry, coconut, whatever you like!

Sandwich the biscuits together with some buttercream. Apply to face.
