Wow, that’s a name and a half! I’m afraid I couldn’t find a more succinct way to get across the details of these busy, cheeky little bars. They start with a chocolate chip cookie base, which is then topped with a peanut butter cheesecake mix and studded with even more chocolate chunks. It’s all at once decadent, refreshing and chocolatey with a subtle peanut butter kick. So basically…

Chocolate chunk cookie + peanut butter + cheesecake (+ more chocolate)

This recipe starts, like most good things, with butter, and sugar.


For the cookie base –

  • 1/2 cup unsalted butter
  • 1/2 cup caster sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • pinch salt
  • 1 tsp baking powder
  • 1 cup flour
  • 1.5 cups chocolate chips or chunks

For the cheesecake layer

  • 240g cream cheese
  • 1/2 cup peanut butter
  • 1/3 cup caster sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup chocolate chips or chunks


Preheat the oven to 160degrees/gas mark 3/325F

First, let’s make the cookie layer! Take your soft butter and sugars, and mix them together thoroughly either by hand or in a mixer, before adding your egg, vanilla, chocolate chips, and finally the baking powder and flour. Once its all combined, spread it out in the bottom of a baking tray – the one I used was about 10 by 5 inches. I’d recommend lining the tray with parchment paper so that its easy to lift the bars out of the tin too.

For the cheesecake layer, simply mix your cream cheese and peanut butter, and beat in the sugar, egg, vanilla and most of the chocolate. Take care not to overbeat or the mixture will become too loose. Pour on top of the cookie base, and then stud the top of the cheesecake layer with some more chocolate chips.


Cover the tray with tinfoil, and bake for 20 minutes, and then remove the tinfoil and bake for a further 20. It should be lightly brown and slightly wobbly – use your judgement and give it another 5 minutes if it looks like it needs more time.

NB – like most things ‘cheesecake’ – these bars actually get better with time! So don’t worry if they seem slightly tasteless when you first take them out of the oven – give them a day and they’ll taste AWESOME.
