You guys know that I looooove extravagent showstopping cakes, like rainbow cake, and chocolate cloud espresso cake but I also think that you can’t beat classic, basic cakes, like madeira (mmmm), banana bread and lemon drizzle cake. This one is moist, tender and extra zingy thanks to plenty of lemony goodness.
Preheat the oven to 160C/gas mark 3/325F and get your ingredients together –
For the cake –
- 250g unsalted butter
- 250g caster sugar
- 4 eggs
- zest and juice of one lemon
- 250g self raising flour
Combine your very soft butter with the sugar and mix until its well incorporated and light and fluffy. Add your eggs one at a time, with a portion of flour with each one and then finally incorporate the lemon juice and zest.
Spoon your batter into a greased loaf or round cake tin, and bake for 35-45 minutes in the middle of the oven. While its baking, lets get started on the lemon drizzle glaze!
For the lemon drizzle glaze –
- juice of three lemons
- 85g caster sugar
Combine your lemon juice with the sugar and stir until dissolved.
Once your cake it out of the oven and almost completely cool, poke a few holes in it gently using a fork and then brush over the lemon drizzle glaze and let it soak in.
Finally, dust with a little icing sugar and serve
So simple but elegant; you’re right sometimes simplest is the best!

if I had to decide, i’d lemon drizzle is probably my favorite cake, ever. My grandmother used to make it whenever I was visiting. This looks delicious!
